Mary Whitney's Baked Apples
Recipe #6 - Alias Grace
I was inspired to post a recipe featuring apples ever since the first time Dr. Jordan met Grace, bringing her an apple in the hopes that it would remind her of Mr. Kinnear's root cellar (and all that went on there). Apples are mentioned again, in a much more meaningful scene, in which Grace recalls a memory involving her best friend Mary Whitney. So I thought it best to dedicate this one to dear Mary.
Grace recounts the time when she and Mary peeled apples and threw the peel over their shoulders to magically foretell the first initial of their future husbands. Grace's peel forms a "J" while Mary's peel breaks- rendering it unable to form an initial. This causes Mary great distress, and ultimately foreshadows her fate.
I say, let's just eat the apples and not waste the nutritious peel by throwing it on the floor... don't you agree?
Ingredients:
4 apples
Brown sugar (eye-ball the amount to fit into each apple)
Cinnamon
Ground ginger
Vegan butter (I used Earth Balance)
Instructions:
Preheat oven to 375 farenheit
Carefully core the apple with a paring knife (or an apple-corer, if you have one!) Use a small spoon to scoop out any remaining remnants of core.
Set apples on a pan or baking dish lined with parchment paper.
Fill each apple with a few spoonfuls of brown sugar, leaving a quarter inch or room at the top.
Place a pat of butter on top of the brown sugar (about 1 teaspoon per apple - but it ultimately depends on the size of each apple)
Sprinkle tops of apples with cinnamon and ginger
Place apples in oven for about 45 minutes, or until they are soft enough to be pierced with a fork.
Carefully slice (They will be HOT), and arrange on a plate to serve.
These are best served warm, and feel free to add a scoop of vegan vanilla ice cream on top!
