Miss Lydia's Potato Soup
Recipe #3 - Alias Grace
This recipe is inspired by Miss Lydia, the daughter of the prison's governor. She is pretty, young, unmarried, and quite taken with Dr. Simon Jordan. During the doctor's visits with Grace in the governor's home, Miss Lydia always does her subtle best to make sure she is noticed by the doctor. Dr. Jordan's thoughts often wander to how lovely Lydia looks whenever she is in the room. He often notes her creamy, smooth complexion... which leads me to my inspiration for this creamy, smooth, and gorgeous (tasting) soup.
Ingredients:
2 tablespoons olive oil
1 large onion, diced
5 cloves garlic, minced
3 celery stalks, diced
2 med-large carrots, diced
3 large (or 5 small) white or yellow potatoes, diced
4 cups low-sodium vegetable stock
1 14oz can full-fat coconut milk
1 tablespoon nutritional yeast
2 teaspoons kosher salt
1 teaspoon black pepper (add more to taste)
Instructions:
Heat olive oil in large pot over medium-high heat
Add onions, carrots, and celery, and saute until onions are translucent and slightly browned, and carrots and celery are softened.
Add garlic, and saute another 1-2 min until nice and fragrant
Add vegetable stock and potatoes, and stir to dislodge any onions or other veggies that may be stuck to the bottom.
Bring to a boil and cover. Turn heat to medium-low and simmer for about 30 minutes, or until the potatoes are soft/fork-tender
Remove from heat and blend with an immersion blender until everything is smooth. (If you do not have an immersion blender, you can use a standing blender by CAREFULLY transferring the soup a few cups at a time to the blender, and repeating until all is smoothly blended.)
Add salt, pepper, and nutritional yeast and stir (or blend) to incorporate.
Add coconut milk and stir to incorporate.
Return to heat and simmer over medium-low for 5 minutes.
