Cumin Rice
Recipe #6 - Rebel Queen
I made this delicious and easy little recipe to go along with my Durga Dal Daal. They go together phenomenally. Trust me.
Ingredients:
1 tablespoon olive oil
2 teaspoons cumin seeds
1/2 teaspoon salt (add more to taste)
1 cup brown rice (If you wish to be more traditional, use basmati or brown basmati rice)
2 cups water
Instructions:
Wash rice thoroughly and drain
Warm oil in a medium-sized pot over medium heat
Add cumin seeds and salt, and cook until cumin seeds begin to sizzle and become very fragrant (about 10-15 seconds) - watch carefully not to burn!
Add rice, and stir thoroughly to incorporate cumin
Add water and bring to a boil (here you can add saffron, if desired)
Reduce temperature to low and cover
Simmer for 45 min-1 hour until all water is absorbed (or cook according to package directions if not using med-grain brown rice)
Fluff with fork
Enjoy alongside your favorite Indian dish!
