Alice's Banana Muffins
What Alice Forgot - Recipe #4
Alice's banana muffins are famous in her community - they are as healthy as they are delicious, and she even freezes batches so she always has some on hand for when hungry guests stop by unexpectedly.
Ingredients:
2 cups whole wheat flour
2 cups all-purpose flour
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoons ground cinnamon
3 teaspoons pumpkin pie spice
3.5 teaspoons baking powder
1 teaspoon salt
4 overripe bananas
1 teaspoon vanilla extract
1/2 cup canola oil
1/2 cup unsweetened apple sauce
1 cup almond milk
Instructions:
Preheat oven to 350 degrees Fahrenheit and grease 2 muffin tins (I did one muffin tin and one loaf pan)
Mix flour, sugar, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt together in a large bowl.
Add bananas, applesauce, oil, vanilla extract, and almond milk to the dry mixture and mix until all ingredients are incorporated (add nuts, chocolate chips, etc. if desired)
Using a 1/4 cup measuring cup, fill greased (or lined) muffin cups with batter.
Bake for 25-30 minutes (or until the muffins pass the toothpick test)
Serve with jam, vegan butter, apple butter, or simply eat as is.
