Thanksgiving Series: Southern-Style Green Beans (GF)
Ingredients:
4 16-oz cans green beans
4 cups (one box) veggie broth (I used Imagine brand “no-chicken” broth)
3 Tbsp olive oil
4 cloves garlic, minced
Instructions:
Heat oil in a large pot over medium-high
Add garlic and saute until browned (this adds a nice “meaty” flavor)
Drain green beans and add to pot. Stir together with garlic and saute for about a minute.
Pour broth over beans and bring to a low boil (medium-low heat).
Cook for 3.5 hours on a low boil/high simmer, continuously adding liquid so the beans are always covered by at least a 1/2 inch (add more broth if desired, but I just used water). Stir every 30 min or so to avoid burning/sticking to the bottom of the pot. Be careful not to break or mash the beans while stirring.
Once beans are melt-in-your-mouth tender, stop adding liquid and continue simmering for about 20 more minutes until all the liquid is cooked off.
