Christmas Series: Gingerbread Cake
Ingredients:
1/2 cup sugar
1/2 cup vegan butter (I used Earth Balance)
1 flax “egg” (1 Tbsp ground flax seed + 3 Tbsp water - let sit 5 min.)
3/4 cup molasses
2.5 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 Tbsp ground ginger
2 Tbsp cinnamon
1/2 tsp nutmeg
1 cup hot water
Powdered sugar for dusting on top
Instructions:
Preheat oven to 350 degrees Fahrenheit and grease an 9” circular cake pan or 8”x 4” loaf pan with vegan butter.
In a large mixing bowl, cream together butter and sugar.
Add flax egg and molasses, and mix on high until everything is well incorporated.
In a separate bowl, sift together flour, baking soda, salt, ginger, cinnamon, and nutmeg.
Slowly mix dry ingredients into wet ingredients until smooth. Slowly stir in the hot water.
Pour mixture into the pan and bake for 45 minutes to an hour, or until an inserted toothpick/knife comes out clean.
Dust powdered sugar over top before serving.
