Ingredients:

  • 1 egg’s worth of egg replacement (I used Bob’s Red Mill Egg Replacer —> 1 Tbsp egg replacer powder + 2 Tbsp water; let sit 5 min until goopy.)

  • 3 tablespoons warm water

  • 3 Tbsp. oat milk

  • 2 tsp vanilla extract

  • 1/2 tsp almond extract

  • Icing (Here’s a good icing recipe!), Red fruit jam (I used strawberry jam), sprinkles, and powdered sugar to decorate- optional

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit, and line 2 large baking sheets with parchment paper.

  2. In a large bowl, mix together flour, baking soda, and salt. Set aside.

  3. In a second large mixing bowl, cream together sugar, butter, vegan “egg,” water, oat milk, and vanilla and almond extracts

  4. While still mixing, slowly add flour/baking soda/salt mixture into the large mixing bowl and mix until fully incorporated with butter/sugar/etc mixture.

  5. Put dough between 2 large sheets of wax paper, and roll out with a rolling pin until about 1/3 inch thick. Carefully place in the freezer for 10 minutes to chill.

  6. After dough is chilled, cut out shapes with cookie cutters and place onto parchment-lined baking sheets.

  7. Bake for about 9 minutes until firm (Note - cookies will not turn brown, but remain white).

  8. Decorate with icing, jam, sprinkles, etc. - whatever your heart desires!

  9. Enjoy!
