Christmas Cookies: Snickerdoodles

Christmas Cookies: Snickerdoodles

Ingredients:

  • 2.5 cups flour

  • 2 tsp cream of tartar

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 cup vegan butter, softened

  • 1 cup sugar

  • 1/4 cup unsweetened applesauce

  • 2 tsp vanilla extract

  • 4 Tbsp sugar (for rolling)

  • 4 tsp cinnamon (for rolling)

Instructions:

  1. Preheat oven to 375 F and line a few baking pans with parchment paper.

  2. In the bowl of a standing mixer, cream together vegan butter and sugar until creamy and well-combined.

  3. Add in applesauce and vanilla extract and continue to mix until combined.

  4. Slowly mix in the flour, cream of tartar, baking soda, and salt.

  5. In a mixing bowl, combine the flour, cream of tarter, baking soda and salt until a thick cookie dough forms.

  6. Cover dough with plastic wrap and place in the fridge to cool for 20 minutes.

  7. When cooled form dough into little 1-2 inch balls using your hands.

  8. Mix the rolling sugar and cinnamon together in a large bowl and proceed to toll each dough ball in the mixture until well-coated.

  9. Place onto lined cookie sheets about 2 inches apart and bake for 10-12 min (depending on your oven and how crispy you like!)

  10. Let cookie cool a bit on a cooling rack and enjoy!
