Quarantine Recipes: Tofu Scramble
This morning I was extremely hungry so I decided to try my hand at tofu scramble! I also had some Gardein breakfast sausage, which is amazing and I highly recommend it to everyone.
I have absolutely nothing interesting to say today, so… enjoy your Sunday! :)
Ingredients:
Firm tofu (drained and cut into cubes)
1 Tbsp olive oil
1/4 tsp turmeric
1/4 tsp salt
1/4 tsp pepper
1/8 tsp kala namak Indian black salt
Scallions, to garnish
Pinch red pepper/cayenne pepper, optional
Instructions:
Using a potato masher or fork, mash/crumble tofu until it resembles scrambled eggs in texture
Heat olive oil in a large skillet over med-high
Add tofu and cook until browned, stirring often
Add turmeric, salt, pepper, and kala namak (and red pepper if desired) and stir until tofu is coated.
Taste and adjust salt/pepper.
Serve with scallions on top and enjoy!
