Summer Series: Cucumber Salad
This is a perfect, quick, simple recipe for a cookout or summertime family reunion (when the world returns to normal). I made it on a humid 90 degree day, and it certainly hit the spot. Cucumbers are already inherently refreshing and hydrating, so how can you go wrong? I also had tons of dill flourishing in my garden, so I thought I would put it to good use.
Ingredients:
1 English cucumber, sliced into half moons
1/2 large red onion (or 1 small) sliced into thin 2 inch strips/ribbons
1 Tbsp fresh dill, chopped
2 tsp vinegar (you can use rice vinegar, apple cider vinegar, white wine vinegar, etc... I used apple cider vinegar)
2 tsp sugar
1/4 tsp salt
Instructions:
Mix all ingredients in a large bowl, cover, and refrigerate for 30 min to one hour.
That’s it!! Can’t get any easier than that!
