Summer Series: Peach Cobbler
Ingredients:
1/2 cup vegan butter, melted
1 cup flour
2 cups sugar, (separated into 1 cup and 1 cup)
1 Tbsp baking powder
1/4 tsp salt
1 cup full-fat oat milk
4 cups fresh peaches, sliced (you can also skin/peel them if you prefer)
1 Tbsp fresh lemon juice
1/4 cup brown sugar
Instructions:
Preheat oven to 400 degrees Fahrenheit.
Pour hot, melted vegan butter into a large casserole dish.
In a mixing bowl, mix together flour, sugar (just 1 cup), baking powder, and salt.
While still mixing, slowly pour in oat milk until combined.
Pour batter evenly over the butter in your casserole dish.
In a sauce pan over medium high heat, cook peaches, lemon juice, and remaining cup of sugar. Bring to a boil and cook for a few minutes, stirring constantly to prevent sticking.
Pour peach mixture evenly into the casserole dish, atop your batter.
Spoon clumps of brown sugar over top.
Bake for about 30 min, until golden brown.
Serve with your favorite vegan ice cream, and enjoy!
