For Emira’s birthday, she and her friends get together at a local, comfy, albeit dive-y restaurant called Tropicana 187. It’s not fancy, but the drinks are plentiful and cheap.
In a red squishy booth, Emira’s three friends sat around her in tight dresses and heavy bronzer. The table was covered in Piña Coladas, fish tacos, pineapple salsa, and pulled jerk chicken. Everything reeked of sugary mai tais and fried coconut shrimp, and every song that came on was another killer. — (Excerpt from Ch. 22)
Ingredients:
1 cup frozen pineapple (I cubed 1/2 a fresh pineapple and popped it in the freezer overnight)
1 can unsweetened coconut cream (14 oz)
2 cups ice
1 cup (8 oz) coconut rum (or white rum)
1 oz chambourd (to add to each drink at the end if desired)
Vegan whipped cream, to serve
Extra pineapple slices and shredded coconut, to garnish
Instructions:
Blend frozen pineapple, coconut cream, pineapple juice, ice, and rum until well-mixed.
Pour into glasses (and add chambourd if you desire).
Top with whipped cream and sprinkle with shredded coconut. Garnish with a slice of pineapple.
