This recipe is inspired by the cupcakes Alix serves at Briar’s airplane-themed birthday party. I added some little pinwheels to echo the propellers Alix added to the guests’ party favor bags.

Next she set up a snack table with a cloud-covered paper tapestry; by the door, she hung soft aviator goggles meant for toddlers to take and wear. There were mini cupcakes dyed the color of the sky, and party favors were lined up in bright blue bags with tiny white propellers that could spin. Alix took close-up photos of the propellers and the cupcakes to post on her Instagram (so close that they could have been taken anywhere, particularly Manhattan). - (Excerpt from Ch.4)
Ingredients:
For the cupcakes:
1.75 cups flour
1 cup sugar
1/2 tsp salt
1 Tbsp baking powder
3/4 cup unsweetened oat milk
1/4 cup unsweetened apple sauce
1/4 cup water
1/4 cup canola oil
1 Tbsp vanilla extract
For the Frosting:
1/2 cup vegan butter (I recommend Earth Balance)
3 cups powdered sugar
1 Tbsp unsweetened oat milk
2 tsp vanilla extract
A few drops of blue food coloring
Instructions:
Preheat oven to 350 degrees Fahrenheit and place cupcake liners in a cupcake tin and spray each liner with oil.
Mix together flour, sugar, salt, and baking powder until well combined.
Add in oat milk, apple sauce, water, oil, and vanilla until smooth and well mixed.
Fill prepared muffin cups 3/4 of the way and tap pan gently on the counter to even out/remove any bubbles.
Bake for about 20 min or until an inserted toothpick comes out clean.
To make the frosting, cream together butter, powdered sugar, oat milk, and vanilla until a nice creamy texture is achieved. If too thick, add a little more oat milk. If too thin, add a little more powdered sugar.
To dye the frosting , add few drops of food coloring and mix well until your desired color is achieved.
Wait for your cupcakes to cool completely before frosting, and use a piping bag for easier application.
