Thanksgiving Series: Corn Pudding (GF)
Ingredients:
1 Tbsp canola oil
1/4 cup corn flour (aka masa harina)
1/4 cup white sugar
1 can creamed corn (16 oz)
1 can sweet corn (16 oz) - do not drain
1 tsp baking powder
1/2 tsp salt
1/4 cup oat milk
Instructions:
Preheat oven to 350°F.
In a medium bowl mix together all ingredients until homogenous
Pour into a greased baking dish (make sure the dish is relatively shallow - like a 9” cake pan)
Bake until the top is slightly golden brown (40 min or so)
