Christmas Series: Lentil Sage Soup
Ingredients:
2 Tbsp vegetable oil
1 medium onion, chopped
3 medium carrots, chopped
3 stalks celery, chopped
5 cloves garlic, minced
1.5 cups brown lentils (rinsed and drained)
6 cups vegetable broth (or 6 cups water + 2 veggie bouillon cubes)
1/3 cup plant-based milk (I use oat milk because I find it is the creamiest)
1/4 cup fresh sage, chopped
Salt and pepper to taste
Instructions:
Heat oil in a large pot over medium-high heat. Add onion, carrots, celery, garlic, salt, and pepper. Cook until soft.
Add lentils and broth. Stir well and bring to a boil. Reduce heat to medium-low and cover. Let simmer for about 40 minutes, until lentils are soft.
Use immersion blender to puree/blend until desired consistency is achieved (if you don’t have an immersion blender, use a normal blender or food processor, a few cups at a time)
Add sage and stir well.
