Christmas Series: Lentil Sage Soup

Christmas Series: Lentil Sage Soup

Ingredients:

  • 2 Tbsp vegetable oil

  • 1 medium onion, chopped

  • 3 medium carrots, chopped

  • 3 stalks celery, chopped

  • 5 cloves garlic, minced

  • 1.5 cups brown lentils (rinsed and drained)

  • 6 cups vegetable broth (or 6 cups water + 2 veggie bouillon cubes)

  • 1/3 cup plant-based milk (I use oat milk because I find it is the creamiest)

  • 1/4 cup fresh sage, chopped

  • Salt and pepper to taste

Instructions:

  1. Heat oil in a large pot over medium-high heat. Add onion, carrots, celery, garlic, salt, and pepper. Cook until soft.

  2. Add lentils and broth. Stir well and bring to a boil. Reduce heat to medium-low and cover. Let simmer for about 40 minutes, until lentils are soft.

  3. Use immersion blender to puree/blend until desired consistency is achieved (if you don’t have an immersion blender, use a normal blender or food processor, a few cups at a time)

  4. Add sage and stir well.

  5. Enjoy :)
