Christmas Cocktail Series: Gingerbread Martini (Mocktail Option too!)

Makes 4 small cocktails:
1 cup vegan half-and-half (I used Ripple brand)
1 can ginger ale
2 Tbsp brown sugar
1 Tbsp molasses (and 1 Tbsp for decorating the glass rim)
1 tsp cinnamon
4 gingersnaps, crushed (for decorating glass rim)
4 shots vanilla vodka (one per drink) - omit this ingredient for mocktail
Instructions:
1. Put 1 Tbsp molasses on a plate
2. On another plate, place crushed gingersnap cookies
3. Rim each glass with some molasses then dip them into the crushed gingersnaps
4. In a shaker, combine vegan half-and-half, ginger ale, cinnamon, brown sugar, and molasses (and vodka if going for the alcoholic version!)
5. Scrape off any excess foam created from shaking
6. Divide among glasses
7. Enjoy!
