Kourabia: Armenian Almond Shortbread
Ingredients:
1 cup vegan butter (Earth Balance is best for baking)
1/2 cup sugar
2 cups flour
1/2 tsp salt
1 Tbsp vanilla extract
1 tsp almond extract
1/2 cup blanched almond pieces (+ more to decorate)
1/4 cup unsweetened almond milk
Instructions:
Preheat oven to 325 F and line 2 large cookie sheets with parchment paper.
Cream together butter and sugar in the bowl of a standing mixer.
Mix in flour and salt, followed by almond extract and vanilla extract.
Place your blanched almonds in a food processor and pulse until finely ground.add to your dough along with almond milk and mix until well combined.
Roll the dough into little balls and place on a parchment-lined baking sheet.
Press each dough ball down with a fork and then decorate with blanched almonds.
Bake about 25 min, or until your cookies are lightly browned.
