Queenie: Apple Cinnamon Porridge

My grandmother bustled down the steps as I made the bed, my head pounding with exhaustion.
“The porridge is getting cold!” she shouted from downstairs.
“Okay, I’m coming, I’m coming.” I flew down the stairs and into the kitchen.
“Your grandfather takes his with a small spoon of brown sugar and a large spoon of honey, I want mine with a large spoon of brown sugar, a handful of raisins, and no honey, and you can have it how you want it but not too much sugar because you’ll get diabetes.”
I started to spoon various servings of porridge and toppings into bowls, and sat eating it with my grandparents. - Excerpt from Queenie, ch. 22
Ingredients:
1 cup rolled oats
1.5 cups water
1/4 tsp salt
1/4 cup vegan milk (I used creamy oat milk)
1/2 a fresh apple cut into small pieces
2-3 Tbsp brown sugar (+/- to your taste)
1 tsp cinnamon
Instructions:
In a saucepan over medium/high heat, bring oats, water, and salt to a boil. Turn heat down to medium and cook for 5 minutes, stirring consistently to avoid clumps or burning.
Stir in vegan milk.
Transfer to a bowl and top with apple, brown sugar, and cinnamon.
