Queenie: Macaroni Cheese

This isn’t like you, Queenie, to be so robotic about things,” my mum said. I heard her stand up.
“Maybe I’m not me anymore.” I closed my eyes, feeling the tears that were about to come.
“Sylvie?” Maggie called from the kitchen. “Can you come and help me, please? The turkey needs a final baste, and my hands are full with the macaroni cheese!”

Ingredients:
1.5 cups raw cashews
3 Tbsp lemon juice
1 clove garlic
1/4 cup nutritional yeast
1/2 tsp yellow mustard
1 cup water
1/2 tsp chili powder
1/4 tsp smoked paprika
1/4 tsp cayenne pepper
1/4 tsp turmeric
1 tsp salt (+ more to taste)
1/4 tsp pepper (+ more to taste)
1 package (16 oz) pasta of choice - I used elbows
1/2 cup full fat oat milk
1/4 cup breadcrumbs, optional
Instructions:
Place cashews in a bowl or large liquid measuring cup and cover with freshly boiled water. Let soak, uncovered for 2+ hours and then drain.
When cashews are done soaking, place them in the bowl of a food processor along with lemon juice, garlic, and mustard. Process while slowly adding in 3/4 cup water through the top.
When nice and smooth, add your spices (chili powder, paprika, cayenne, turmeric, salt, and pepper) and process again until well mixed.
Cook your pasta according to package instructions, drain, and place back in the pot. Pour your sauce + oat milk over the pasta and stir well.
Add breadcrumbs, if desired, and stir again until combined.
