Christmas: Southern Boiled Custard
Ingredients:
5 cups high-fat oat milk (I used Oatly)
1 cup granulated sugar
1 Tbsp. vanilla extract
3 Tbsp corn starch
1.5 Tbsp cold water
Instructions:
Mix corn starch with water until a homogeneous paste and set aside.
Heat oat milk in medium saucepan over medium-high heat, and whisk in sugar. Cook until milk begins to steam.
Add vanilla and stir.
Slowly whisk in corn starch-water mixture and bring to a boil. Cook until milk is thickened a bit.
Let cool 10 min or so and then transfer to a pitcher.
Chill/store in the refrigerator and drink cold.
