Christmas: Southern Boiled Custard

Ingredients:

  • 5 cups high-fat oat milk (I used Oatly)

  • 1 cup granulated sugar

  • 1 Tbsp. vanilla extract

  • 3 Tbsp corn starch

  • 1.5 Tbsp cold water

Instructions:

  1. Mix corn starch with water until a homogeneous paste and set aside.

  2. Heat oat milk in medium saucepan over medium-high heat, and whisk in sugar. Cook until milk begins to steam.

  3. Add vanilla and stir.

  4. Slowly whisk in corn starch-water mixture and bring to a boil. Cook until milk is thickened a bit.

  5. Let cool 10 min or so and then transfer to a pitcher.

  6. Chill/store in the refrigerator and drink cold.

  7. Enjoy!
