Christmas Cookies: Ellie's Chocolate Chip Bars
Ingredients:
1 cup vegan butter, softened (I used Miyoko’s)
1/2 cup sugar
3/4 cup brown sugar (packed)
1/2 cup unsweetened apple sauce
1 tsp vanilla extract
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup chopped walnuts
2 cups vegan chocolate chips
Instructions:
Preheat oven to 375 degrees Fahrenheit.
Cream together butter, sugar, brown sugar, apple sauce, and vanilla until well mixed.
Stir in flour, baking soda, and salt.
Stir in walnuts and chocolate chips (Dough will be stiff).
Press dough into an un-greased rectangular or square pan (13x9x2, or similar)
Bake for 25 min, or until golden brown.
Allow to cool completely before cutting into bars with a sharp knife.
