Summer Series: Spicy Carrot Slaw
This recipe is based on one of my grandmother’s that my dad still loves to this day. Her recipe only has 2 ingredients - shredded carrot and mayonnaise, which is fine and all, but I wanted to punch it up with some spices!
Ingredients:
5 large carrots
2/3 cup vegan mayonnaise (I used Follow Your Heart’s Veganaise)
1.5 tsp lime juice
1/2 tsp chili powder
1 tsp smoked paprika
1/4 tsp chipotle powder
1/8 tsp cayenne pepper
Salt and pepper to taste (about 1/8-1/4 tsp of each)
Instructions:
Grate your carrots using a food processor with grater attachment, a box grater, or vegetable peeler and put in a large bowl. Set aside.
In a small bowl, whisk together vegan mayonnaise, lime juice, chili powder, smoked paprika, chipotle powder, cayenne pepper, salt, and pepper until well combined.
Mix mayo into carrots until they are well coated.
