No one at my school knows that it’s my birthday today. In the toilets at lunch, I eat the whole batch of Skittles cookies mum made for me to share with my friends. Mum doesn’t know I don’t have any friends. I know if I keep my head down then I can look forward to stargazing, peacefully, with Uncle B this evening. — Excerpt from The Black Flamingo, by Dean Atta
Ingredients:
1/2 cup softened vegan butter (I used Miyoko’s)
1 tsp vanilla extract
1/3 cup sugar
1/4 cup brown sugar
1/4 cup unsweetened applesauce
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1.5 cups flour
1/3 cup skittles candy (or other colorful candy like m&m’s)
Instructions:
In a large bowl, cream together vegan butter, vanilla extract, sugar, brown sugar, and apple sauce.
Add baking powder, baking soda, and salt and continue to mix.
Slowly add in flour (1/2 cup at a time) until all mixed in.
Stir in skittles until well distributed throughout the dough.
Cover bowl with plastic wrap and refrigerate for 1-2 hours.
Preheat oven to 350 degrees Fahrenheit and line 2 baking sheets with parchment paper (You NEED to line with parchment paper, I cannot stress this enough! I didn’t do this with my first batch and ruined a baking sheet…)
Roll dough into 1-2 inch balls and place evenly on baking sheets.
Bake for about 15 min until the cookies start to get nicely browned on top. Let cool a bit before eating.
