Summer Series: Avocado Toast
This is how to make my absolute favorite version of avocado toast. And trust me, I have had hundreds… more often than not, avo toast is the only vegan option on a Sunday brunch menu, so we have become great friends.
(Btw, I have a couple bread recipes up that would make excellent toast: Crusty Italian and Country Wheat)
Ingredients:
Your favorite bread
Ripe avocado
Olive oil
Garlic powder
Onion powder
Smoked paprika
Salt and black pepper
Sesame seeds
Pine nuts
Microgreens of choice (or arugula)
Instructions:
Toast your bread to perfection (whatever that means to you… I like crispy and dark, though some would call that “burned…”)
Slice 1/4 - 1/2 an avocado and add some slices to your toast (all measurements are up to you here!) and mash down a bit with a fork.
Drizzle on some olive oil.
Sprinkle on top:
—Garlic powder
—Onion powder
—Smoked paprika
—Salt and pepper
Top with sesame seeds, pine nuts, and microgreens (or arugula)
