Summer Series: Avocado Toast

This is how to make my absolute favorite version of avocado toast. And trust me, I have had hundreds… more often than not, avo toast is the only vegan option on a Sunday brunch menu, so we have become great friends.

(Btw, I have a couple bread recipes up that would make excellent toast: Crusty Italian and Country Wheat)

Ingredients:

  • Your favorite bread

  • Ripe avocado

  • Olive oil

  • Garlic powder

  • Onion powder

  • Smoked paprika

  • Salt and black pepper

  • Sesame seeds

  • Pine nuts

  • Microgreens of choice (or arugula)

Instructions:

  1. Toast your bread to perfection (whatever that means to you… I like crispy and dark, though some would call that “burned…”)

  2. Slice 1/4 - 1/2 an avocado and add some slices to your toast (all measurements are up to you here!) and mash down a bit with a fork.

  3. Drizzle on some olive oil.

  4. Sprinkle on top:

    —Garlic powder

    —Onion powder

    —Smoked paprika

    —Salt and pepper

  5. Top with sesame seeds, pine nuts, and microgreens (or arugula)

  6. Enjoy!
