Fall Series: Vegan Meatloaf
Ingredients:
1.5 lbs plant-based ground “beef” (I used Impossible brand)
1 large onion, chopped
3 cloves garlic, minced
1/4 cup oat milk (unsweetened)
3/4 cup oats (quick oats or old fashioned oats)
2 flax “eggs” (Combine 2 Tbsp flax seed meal with 5 Tbsp hot water, stir and let sit until goopy)
2 tsp soy sauce
1 tsp apple cider vinegar
1 tsp brown sugar
1 can condensed tomato soup
1/4 cup chopped parsley
1/2 cup chopped basil
1 tsp onion powder
1/2 tsp celery seed
1/2 tsp smoked paprika
Salt and pepper, to taste (I used 1/2 tsp each)
3/4 cup of your favorite bbq sauce (I used Sweet Baby Ray’s) + more to top with before baking
Instructions:
Preheat oven to 350 degrees Fahrenheit and grease a loaf pan or square cake pan.
In a large bowl, using your hands or a wooden spoon, mix all ingredients
Press mixture into your greased pan, and top evenly with more bbq sauce.
Bake for an hour, or until top is well browned.
Enjoy! I like to slice mine and eat on white bread with ketchup for a classic meatloaf sandwich :)
