Fall Series: Pumpkin Muffins
Ingredients
1.75 cups flour
1/2 cup sugar
1 Tbsp brown sugar
2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground allspice
2 tsp baking soda
1/2 tsp salt
1 can pureed pumkin (about 15 oz)
1/2 cup oat milk
1/4 cup melted coconut oil
Instructions:
Preheat oven to 400 degrees Fahrenheit and line/grease a muffin tin.
Mix all dry ingredients together in a large bowl.
Mix in pumpkin, oat milk, and oil until well combined.
Evenly pour batter into your muffin cups and top with a sprinkle of extra cinnamon, if desired.
Bake for 20-25 min until an inserted toothpick comes out clean.
