Fall Series: Pumpkin Muffins

Fall Series: Pumpkin Muffins

Ingredients

  • 1.75 cups flour

  • 1/2 cup sugar

  • 1 Tbsp brown sugar

  • 2 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground allspice

  • 2 tsp baking soda

  • 1/2 tsp salt

  • 1 can pureed pumkin (about 15 oz)

  • 1/2 cup oat milk

  • 1/4 cup melted coconut oil

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit and line/grease a muffin tin.

  2. Mix all dry ingredients together in a large bowl.

  3. Mix in pumpkin, oat milk, and oil until well combined.

  4. Evenly pour batter into your muffin cups and top with a sprinkle of extra cinnamon, if desired.

  5. Bake for 20-25 min until an inserted toothpick comes out clean.

  6. Enjoy!
