Fall Series: Pumpkin Pie Latte
Make these cookies to go with your latte for the perfect Fall experience :)
Ingredients:
2 cups vegan milk (I used Kirkland unsweetened almond milk)
2 Tbsp pumpkin puree
1 Tbsp white sugar
1 tsp brown sugar
2 tsp vanilla extract
1/2 tsp pumpkin pie spice
1 or 2 shots espresso (1 shot = 1 oz)
Vegan whipped cream, to serve
Instructions:
Combine milk, pumpkin, sugar, brown sugar, vanilla, and pumpkin pie spice in a small saucepan and heat over medium until steaming.
Pour into a mug and stir in fresh espresso.
Top with vegan whipped cream and sprinkle with more pumpkin pie spice.
