Fall Series: Pumpkin Chocolate Chip Cookies
Ingredients:
1 cup canned pumpkin puree
1 cup sugar
1/2 cup veggie oil
1 flax “egg” (1 Tbsp flax seed powder mixed with 2 Tbsp hot water. Let sit until goopy
1 tsp oat milk
1 Tbsp vanilla extract
2 cups flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 cups vegan chocolate chips (I used Enjoy Life brand)
Instructions:
Preheat oven to 350 degrees Fahrenheit.
In a large bowl, mix together pumpkin, sugar, oil, flax egg, vanilla, and oat milk until well combined.
While still mixing, slowly add in flour, baking powder, baking soda, cinnamon, and salt.
Stir in chocolate chips.
Scoop out little balls and place on an ungreased cookie sheet a few inches apart.
Bake for 12-14 min.
