The week before my first Christmas with Tom, I was sitting at the table having Friday fish and chips with Tom’s family discussing how “the little African boy” that they sponsored was doing when his mum reached across the table and put a hand on my forearm.
“You know, you’re more than welcome to spend Christmas with us here in Peterborough, Queenie.”
“Um, is she?” Tom’s brother wasn’t up for it.

Ingredients:

  • 4-5 russet potatoes, sliced into thin fries (see pictures)

  • 2-3 Tbsp olive oil (I used truffle infused olive oil)

  • Salt and pepper to taste

  • 2 Tbsp fresh rosemary, chopped

  • 1/4 cup fresh parsley, chopped

Air Fryer Instructions:

  1. Soak freshly cut fries in cold water for at least 30 min. When done soaking, drain and place to dry on a large towel.

  2. Pat fries dry with more towels and place in a large bowl.

  3. Preheat air fryer to 380 degrees Fahrenheit.

  4. Toss fries with oil, salt, and pepper, making sure to evenly coat them.

  5. Arrange in 1 or 2 layers in the air fryer basket and bake 20 min (take basket out to shake after 10 min, then put it back in).

  6. Place fries on your serving platter and sprinkle with fresh rosemary and parsley.

  7. Serve with your favorite condiments and enjoy!

Oven Instructions:

  1. Soak freshly cut fries in cold water for at least 30 min. When done soaking, drain and place to dry on a large towel.

  2. Pat fries dry with more towels and place in a large bowl.

  3. Preheat oven to 375 and line a few cookie sheets with parchment paper.

  4. Toss fries in oil, salt, and pepper.

  5. Arrange in one layer on parchment-lined pans

  6. Bake for 20 min, remove from oven and carefully flip each fry with tongs. Place back in oven and turn heat up to 425 F.

  7. Bake an additional 10 min until crispy and browned.

  8. Place fries on your serving platter and sprinkle with fresh rosemary and parsley.

  9. Serve with your favorite condiments and enjoy!
